- 1 egg yolk
- 3/4 cup oil
- 1/2 tsp mustard (optional)
- 1 tsp lemon juice

- Start by separating the eggs
- Add a few drops of water to a mixing bowl (optional)
- Add egg yolk and mustard to bowl, begin whisking
- Very slowly begin to add oil and whisk constantly. Mixture will thicken
- Add lemon juice or vinegar and serve
